What is special about All-Clad?
The Core is a generous layer of aluminum for even heating, and these 2 layers are bound to 18/10 stainless steel which provides the cooking surface as it will not react to food. All-Clad uses bonded aluminum for it's stainless core. All-clad also has 2 non-clad lines, Hard Anodized and Specialty cookware.
Do chefs use All-Clad?
Some brands, like the chef-favorite All-Clad, have an aluminum core. This is because aluminum is a great conductor, and adding it to the layers of metal gives the steel more even heat distribution and retention.
